Ingredients:

  • 4 fresh trout fillets
  • 1 tablespoon coconut oil
  • 1 shallot, finely diced
  • 3 cloves of garlic, minced
  • 1 tablespoon grated lemongrass
  • 1 red chili, seeded and finely chopped
  • 1 can (14 oz) full-fat coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon fresh lime juice
  • 2 teaspoons sugar
  • Salt and pepper, to taste
  • Fresh coriander (cilantro) leaves, for garnish

Instructions:

  1. Begin by seasoning the trout fillets generously with salt and pepper on both sides.
  2. In a large skillet, heat the coconut oil over medium heat. Gently place the seasoned trout fillets in the skillet, skin side down, and cook for approximately 4-5 minutes until the skin becomes crispy and golden. Flip the fillets and cook for an additional 2-3 minutes until they are cooked through and flake easily. Transfer the cooked trout to a plate and set aside.
  3. Using the same skillet, add the diced shallot, minced garlic, grated lemongrass, and chopped red chili. Sauté the mixture for about 2-3 minutes until the shallots turn translucent and the aroma of the spices fills the air.
